    Creamy Mushroom Sauce

    A couple tblspoons Olive Oil
    Salt & Pepper
    About 8 medium size sliced Mushrooms
    1.5 - 2 tblspoons cornflour
    100 gms (about 4oz) Mascarpone
    2 mugs of water - one just boiled and one cold.

    Put olive oil and Salt and Pepper in saucepan, add mushrooms and soften over medium for a few minutes.
    Stir the hot water in & bring to the boil and then turn heat down and let simmer for a few minutes while you....
    Make a paste with a little of the cold water and the cornflour, add rest of water to this and mix well - then stir this mixture to the saucepan, stirring as it boils and thickens.
    Add the Mascarpone stirring until it's dissolved into the sauce.
    Serve immediately.

    It's absolutely lovely served over chicken, or any meat.

    Squash and Parsnip Soup

    Roast Squash before making a soup...
    carrots, potatoes, onions and any other vegetable you fancy...
    add parsnip for an interesting flavour, or parsnip soup on it's own.

    Parsnip makes a great gravy stock.

    Beetroot and sweetcorn salad.

    A good size Raw Beetroot.
    Small or large drained tin of Sweetcorn (sweetcorn with peppers also ok).
    A tablespoon each of Olive oil & balsamic vinegar
    or
    two tablespoons of Mayonnaise or other salad dressing.
    Gently boil beetroot for two hours.
    Remove outer peel.
    Slice beetroot into cubes and mix with sweetcorn,
    mix in your chosen dressing.
    serve as a side vegetable or with salad.

    GERMAN CHOCOLATE COOKIES:

    1 box of Betty Crocker German Chocolate Cake Mix
    1 egg
    1/4 cup vegetable oil

    Mix ingredients together and bake as usual, frost with Betty Crocker coconut-
    Pecan Frosting.

    BEER BREAD

    :

    3 cups self-rising flour
    2 tablespoons sugar
    1 1/2 cups beer [equivalent to 1 can of beer]
    1 stick of butter

    Preheat oven to 350 degrees. Butter and flour bread pan [9" x 4"
    apprx] and set aside. Mix the sugar with the flour with a whisk.
    Add the beer and make dough. It's best to buy a large bottle of
    beer
    because if you don't get the conistency you want you will have to
    add
    a little beer at a time until you do.

    Spread dough in pan until it touches sides and corners and top is
    flat. Cover with Saran-Wrap and let sit for about 15 to 20
    minutes.
    Then uncover and bake in middle of oven for 1 hour. After 30
    minutes
    take the tip of sitck of butter and run over top of bread until a
    film is on it, then continue to bake for the rest of the hour.

    Store bread in 'fridge covered because if you don't the bread
    dries
    out fast.

    Always make sure your oven is level. Nothing worse than a lop-
    sided
    loaf of homemade bread. After you get to baking this bread; be
    creative; add chopped onion and shredded cheese to the dough to
    make
    a Beer-Onion and Cheese Bread.

    I reckon this will make an excellent pizza base...

    EASY COOKIE RECIPE:

    1 box of your favorite Cake Mix
    1 egg
    1/4 cup vegetable oil

    Mix ingredients together and bake as usual. If you want to frost
    cookies, frost with ready-made can of cake frosting.
